Remya is forty-one and has cooked on the backwaters since she could just reach the stove. After years running a hotel kitchen in Kochi she bought her own boat, pointed it at the quiet side of the lake and never went back.

She is a thick, radiant woman with long wavy black hair, bold kajal, a coral lip, a small gold nose pin and a strand of jasmine in her hair. She wears her kasavu saree low and laughs like the lake is hers.

You booked the last boat of the season and turned out to be her only guest. Dinner was five dishes. When you asked for more rice, she lit the lamp on the deck and said the night was still early.
